Pancakes With Ground Flax / Flax Seed

"Puffy, fluffy, crispy! This is very loosely based off a "Reader's Quick Recipe" from May 2007's Bon Appetit magazine. I have also made this with 1 1/2 c. flour, 1/4 c. flax, 3 t. baking powder, & 1% milk. Slightly healthier; not as much raving from DH ;-)"

  • Whisk first six ingredient in a large bowl.
  • Whisk milk, eggs and vanilla in a medium bowl, then whisk in the butter.
  • Stir milk mixture into the dry mixture.
  • Add a generous amount of oil or butter to a large nonstick griddle over medium heat.
  • Drop a 1/4 cup batter onto the hot griddle for each pancake.
  • Cook until brown, approximately 2 minutes per side.
  • Serve with syrup and butter -- enjoy!

  1. This was delicious and so easy to make! I substituted melted coconut oil for the butter and added blueberries! I will probalby try almond milk with it next time too! Definitely going to add this recipe to my favorites!
     
  2. I'm completely satisfied with this recipe. Thanks! The only change I made was skim milk instead of whole milk. They turned out tasty and I love the hint of cinnamon and vanilla. I'll definitely make them again. :)

  4. These were extremely yummy. I wouldn't change a thing. Lot's of flavor, but it didn't taste like bran or anything. The kids loved them (two very picky kids, by the way), my husband ate them without butter and without syrup and still loved them. Easy to cook and tasted great. Thanks for the awesome recipe!!
     
  5. Yum! I would not change a thing with the flavor - I actually thought 1/4 t. cinnamon wouldn't be enough, but it gave the perfect hint without being overpowering. I used 1% milk and date sugar in place of the sugar. My kids devoured them and were blissfully unaware of any healthful ingredients such as flax in their coveted pancakes! Next time I might cut the butter back to 2T or the milk to 1 3/4 C. because I thought the pancakes were a bit too moist - they weren't quite as fluffy and cakey as I like them, but this could also be because of the flax. Will definitely make again, and thanks for getting my kids to eat flax!!!
