BLOOD ORANGE HONEY SAUCE
- 118.29 ml honey
- 118.29 ml blood orange juice, strained
- 7.39 ml cornstarch or 7.39 ml cornflour
- 14.79 ml butter
- 226.79 g fresh strawberries, quarter

PANCAKE
- 354.88 ml all-purpose flour, sifted
- 17.25 ml baking powder, sifted
- 2.46 ml salt, sifted
- 14.79 ml white sugar, sifted
- 1 egg
- 44.37 ml butter, melted and slightly cooled
- 354.88 ml milk
- cooking spray, for pan
directions
- Blood Orange Honey Sauce: In small saucepan, add honey, blood orange juice and cornflour, whisk well until sauce ingredients are blended.
- Put saucepan over a medium heat and bring mixture to a boil, whisking occasionally and cook until sauce starts to boil, then remove from heat.
- Whisk in butter until completely dissolved into the sauce. Set aside and allow cooling until pancakes are ready.
- Pancake: In a large bowl, add sifted flour, baking powder, salt and sugar, mix well and make a small well in the centre of the bowl with the dried ingredients.
- Add the egg in centre of the well, then add melted butter, slowly add milk and mix until smooth. (You may not need to add the entire 1 1/2 cups of milk, consistence of mixture needs to be smooth).
- Using the cooking spray, lightly oil pancake pan or non stick frying pan over medium heat.
- Once pan is hot, pour approximately 1/4 cup of pancake mixture onto the pan. Brown on one side of pancake then flip, brown other side of pancake, place cooked pancake onto a warm plate. Repeat this step until all the pancake mixture has completed. Note: Only flip once as pancake will become tough and not light.
- To assemble: Equally divided pancakes on four plates. Equally pour blood orange honey sauce on top of the pancakes and then add strawberries on top of the sauce.
- Enjoy.

Very, very nice 'cakes, these! I made the recipe as written (well, minus the fresh berries, this time around) & wasn't disappointed at all! i did use a mildly-flavored orange blossom honey, & that was great, but then, I also enjoy those sweet syrups, so . . . ! 5 Stars - After tasting these pancakes DS said if I do not make my special pancakes then he wants these ones… forever. I prepared both cakes & sauce just as instructed, including the full amount of milk. The batter was wonderfully smooth. The cakes cooked up light & fluffy & the sauce was very easy to make as well. I thought the honey was a little too prominent in the sauce, but that’s just personal preference, everyone else loved it as is. When we make it again I will probably use a little less honey. Made, enjoyed & reviewed for RSC#11, January 2008.

The pancakes were fluffy and really good, but the sauce is the best part! I might cut back the cornstarch just a little bit in it. I also subbed sugar in the sauce, since I was out of honey, but the amount of sugar was just right for us. I halved the butter in the pancakes, and used smart balance for both. I did not have any problems with the batter. We had 16 ounces of strawberries, so used them all; we enjoyed having enough to put on each pancake. Enjoyable breakfast!
