These easy pancakes are fluffy and you can add bananas, chocolate morsels, or chopped pecans or walnuts.

This is a great recipe! Being that it's fall, I added pumpkin pie spice, all spice, nutmeg, cinnamon, and ginger.

  1. In small batter bowl, melt butter in microwave on high for 30 seconds or until melted. Add milk and eggs; whisk until blended.
  2. In classic batter bowl, combine flour, sugar, baking powder and salt. Add milk mixture; whisk just until dry ingredients are moistened (batter will be slightly lumpy).
  3. Heat double burner griddle over medium heat for 5 minuets or until hot. Lightly spray with vegetable oil. Pour about 1/4 cup of batter onto griddle; immediately sprinkle your mix-in if you want. Cook pancakes 2-3 minutes on each side or until golden brown, TURN ONLY ONCE (it is the secret to perfectly cooked pancakes). Serve immediately.
