Pancakes (Quick and Easy)
- In small batter bowl, melt butter in microwave on high for 30 seconds or until melted. Add milk and eggs; whisk until blended.
- In classic batter bowl, combine flour, sugar, baking powder and salt. Add milk mixture; whisk just until dry ingredients are moistened (batter will be slightly lumpy).
- Heat double burner griddle over medium heat for 5 minuets or until hot. Lightly spray with vegetable oil. Pour about 1/4 cup of batter onto griddle; immediately sprinkle your mix-in if you want. Cook pancakes 2-3 minutes on each side or until golden brown, TURN ONLY ONCE (it is the secret to perfectly cooked pancakes). Serve immediately.
