What a great way to make sure you don't miss breakfast when you're in a hurry. I almost always have pancakes in my freezer. Now I just pull a couple out, pop them in the microwave, top them of with peanut butter and jelly, and I have a delicious and satisfying breakfast to go. I used Pete's Scratch Pancakes (#5170) instead of the pancake mix. Thanks for sharing Chef1MOM.

So simple, but what a huge hit with my family. What a great idea Chef1mom. I made them with only jelly and used cooking spray insteasd of oil. I also decided just to make mini circle pancakes instead of big ones and cutting. The kids and dh want me to make them again soon. Better for you than a jelly donut, but according to my husband just as yummy. Made for bevy tag 2008.
