Pan-Seared Tilapia

"Quick, easy and quite nice. I usually put the fillets over mashed potatoes and to make it super quick I prepare the frozen mashed potatoes, but of course homemade are much better. I usually side this with sauteed spinach or summer squash."

  • Preheat broiler.
  • Mix Bread crumbs with parsley and basil.
  • Heat skillet to med-high heat.
  • While pan is heating ,salt and pepper filets on both sides and dip in olive oil and gently shake off excess. Dip into breadcrumbs and set aside.
  • Heat remaining oil in pan until just starting smoke and add filets.
  • Sear 2-5 minutes on each side, depending on thickness of filets (2 mins each side for thinner filets, 4 mins for thicker cut.).
  • Slide filets into broiler pan and broil 3 minutes more until cooked through.
  • Serve immediately.

  3. loved it. I did not have dried parsley but used Italian spices in the plain breadcrumbs. Turned out very well and quite delicious.
     
  4. I didn't have any pre-seasoned breadcrumbs on hand, and created my own by combining seasonings to my taste with plain crumbs. The result was a very tasty breading for the fish. However, I think that the cooking directions are for much thicker tilapia fillets than what I have available. Just a couple of minutes on each side in the hot oil was sufficient to cook the fish through. The broiler time would have made my fillets incredibly over-cooked and dry. By omitting the broiler time, I had a flavorful, tender and flaky fish that was perfectly paired with roasted garlic mashed potatoes and roasted asparagus.

Unfortunately one was born with a Congenital defect called Diaphragmatic Hernia. She has been in the hospital since she was born and as of today it has been almost 8 months. As soon as we come home, I plan to start getting back in the kitchen, but it has been the last thing on my mind as of late. <br />2nd Update: My daughter has been home for a year now and she's been doing really well. She's still has a long way to go, but she's strong as an ox!</p>
