Loved this recipe...I added some parmesan to the bread crumb mixture and served it up with Spanish yellow rice and a salad...YUM!!!

loved it. I did not have dried parsley but used Italian spices in the plain breadcrumbs. Turned out very well and quite delicious.

I didn't have any pre-seasoned breadcrumbs on hand, and created my own by combining seasonings to my taste with plain crumbs. The result was a very tasty breading for the fish. However, I think that the cooking directions are for much thicker tilapia fillets than what I have available. Just a couple of minutes on each side in the hot oil was sufficient to cook the fish through. The broiler time would have made my fillets incredibly over-cooked and dry. By omitting the broiler time, I had a flavorful, tender and flaky fish that was perfectly paired with roasted garlic mashed potatoes and roasted asparagus.
