Dill Tarter Sauce
- 1⁄2 cup mayonnaise
- 1⁄3 cup finely chopped dill pickle
- 1⁄3 cup finely chopped red onion
- 1 tablespoon lemon juice
- 1⁄4 teaspoon dill weed

Salmon Rub
- 1 teaspoon sea salt
- 1⁄2 teaspoon black pepper
- 2 tablespoons brown sugar
- 1 teaspoon lemon zest
- 4 salmon fillets, skinned
- 2 tablespoons olive oil
directions
- Dill Tarter sauce: Mix together ingredients, cover and chill.
- Preheat oven to 400º.
- Mix rub ingredients together, then sprinkle over top of filet. Pat into meat.
- Heat oil in skillet over medium-high heat. Cook filets in oil, 2 minutes each side.
- Transfer skillet to oven and cook until fish flakes with a fork, about 6 minutes.
