    Directions:

      in 9" pie pan stir together all ingredients except cornmeal, fish and oil.
    2. 2
      on waxed paper place cornmeal, dip into batter, then coat both sides of fish with cornmeal.
    3. 3
      in 10" skittle heat oil until hot.
    4. 4
      place 3 or 4 fish fillets in hot oil.
    5. 5
      cook over med heat until golden brown.
    6. 6
      turn and continue cooking until golden brown and fish flakes with a fork.
    7. 7
      repeat with remaining fish, place fried fish on paper towel to drain any excess oil.
    8. 8
      Serve with potatoes or rice.

      Loved it! Used with Atlantic Cod fish, so pretty cheap, but tasted like I bought the good stuff. Definitely will feed 4. My husband and 22yr old son are big eaters and there was 2 big filets left.

      My husband just used this recipe and we liked it. He says the key is to use a cast iron skillet. The great thing is you can add spices to your liking. He only cooked 2 Flounder filets and had left over batter. He mixed some corn meal and sugar in it, and made some hush puppies.

      The breading was too thick and not enough flavor. I would recommend scraping some of the batter off before you put it in the cornmeal. The positive is that the fish didn't stick to the pan and looked like a it could be used in a cookbook picture!
