Delicious JustJan....simply delicious. We never tried pan fried asparagus before, let me tell you that we will be enjoying them prepared this way, often in the future. So quick and easy to make with terrific results. I did use butter instead of bacon grease, didn't have any on hand. Thanks so much for sharing this recipe. Made for Name That Ingredient Tag Game.
Hi Jan, was going to post a very similar recipe, so thought I would review yours with my changes. I use butter or oil instead of the bacon grease and add some garlic, just because I love it! This is a SENSATIONAL dish & I think THE way to prepare asparagus. This is our "go to" recipe. Even more delicious when prepared on the BBQ for that added smokiness. I sliced mine up in 2" chunks before frying....added a little garlic infused olive oil too...fast easy side.
I was only serving 2 so used 1 bunch, which weighed about 160 grams so only used a little over a teaspoon of bacon grease (especially cooked of some bacon to get it - had to buy a rasher of middlecut to do so as I normally buy rindless bacon which has very little fat) but oh it added such good flavour to the asparagus giving it a smoky salty taste (reminded me of my late dad and his passion for frying mushrooms with bacon - marriage made in heaven he always reconned) but the DS and I thoroughly enjoyed this with a light sprinkle of freshly cracked salt and pepper and squeeze of lemon juice.
