Pam's African Chicken Stew

  • In a large skillet with a tight-fitting lid, heat oil over medium high heat. Add chicken, and brown quickly. Remove chicken from pan.
  • Reduce heat to medium low, and add garlic, onion and sweet potato to the pan; cook for 5 to 7 minutes. Season with cumin, coriander, red pepper, and salt and pepper.
  • Mix in chicken broth and browned chicken. Place lid on skillet and simmer, stirring occasionally, for 10 to 15 minutes.
  • Remove lid, and stir in the peanut butter and garbanzo beans. Make sure the peanut butter is blended well. Replace lid to simmer for 2 more minutes.

  1. Tastes mainly like chicken stock with a touch of peanut butter and chili flakes thrown in. I did leave out the sweet potato, so maybe it would have been much better with that included.
     
  2. Since we had some leftover chicken and a sweet potato that we needed to use, I decided to try out this recipe for dinner tonight. What a treat! :) My whole family really liked the delicious and different blend of flavors, and it wasn't too difficult to make. Thanks for sharing this great recipe!
     
  3. This is a really filling and hearty stew and all the flavors are perfect! I used African Ghanaian yam in mine instead of sweet potato since I was able to obtain it. I also used crumbled piri piri peppers instead of red pepper flakes. I did have to cook mine longer as the yam seemed to need more time. We really enjoyed! Thanks for sharing.   4. We absolutely LOVED this stew. It savory and flavorful without being over spiced. I added a bit of chopped green chili and ground red pepper but otherwise made exactly as the recipe states. I will add that this was even MORE flavorful the next morning (I just HAD to take a nibble before coffee! hee, hee). Thanks for making my visit with the Babes in Africa on the ZWT4 even more pleasurable.
     
  5. This stew is delicious. My young children found it a little too "spicy", but I wouldn't change a thing. I set aside some of the browned chicken pieces in anticipation of the kids not eating the finished product. I followed the recipe as posted, except that I did not have any coriander. It still had a lot of flavor even though it was missing that one ingredient. The only thing I wasn't crazy about was that the chicken pieces were in strips. I ended up cutting the chicken in my bowl into bite sized pieces before I ate it. Next time I would either cube or shred it when adding it to the stew.

I've saved a lifetime of recipes and learned so much about cooking and ingredients that I actually feel proud of my cooking. I bet my Mom looks down on me with pride every time I cook a new recipe from RecipeZaar, and I bet my Dad cracks up every time he sees me photographing what I've cooked! My daughters have actually gotten into the act, too, and are quite versed in searching for recipes and answers here on Zaar. Makes me proud to be their Mom. RecipeZaar isn't just a "website." It's a lifestyle. And some of the friends I've made here are LIFELONG friends to me --- and in my estimation, those types of people are a rare thing to find in this world. :) P.S.
