I made this soup some time ago. I have been trying to find the recipe ever since. We all loved it and it was so easy. I made it pretty much as listed. Excellent and very easy! I was looking for a potato "soup" that wasn't too thin and wasn't completely over processed cheese. I added more garlic and while I roasted the potatoes in the microwave for speediness I did finish the recipe out on the stovetop.
Could have used a bit more flavor so I may add some ham next time or just plain ole broccoli to keep the sodium down.

I made the recipe as stated since I don't like changing a whole lot before reviewing it. I thought it tasted great. I used 3 green onions. Some cubed ham might be good - but Pampered Chef is advertising the recipe as less than $2/serving to feed your family so that would have upped the price point. Delicious, especially on a cold day. I do not have all these Pampered Chef tools, but made it just fine by adapting it a little here and there for what I had. I baked the potatoes in the micro, then did the rest on the stove top.
