      Yum! I had some left over barbecue chicken that I had cooked on the grill with barbecue sauce, so I cut that up and it worked perfectly! Superb recipe.

      This was really tasty. I used my 'Mysterious Multiplying Chicken' recipe to use only one chicken breast instead of three. Also, we used bigger tortillas and spread the mixture thin...DON'T DO THAT because you lose much of the bbq flavor intended. I tried them made correctly after eating the other's that were spread thin and I was sorry that I had not followed the recipe instructions on using the smaller tortillas so that I would have ended up with more topping on each quesadilla. I also sauteed the onions and green peppers just a little before adding because we like the flavor of sauteed onions so much. Thank you for posting, Karen. This recipe is going in my Tried and True Cookbook.

      I love quesadillas...i didnt line my pampered chef stone ware with foil. Thats probably why it didnt brown all that well. I will also add diced tomatoes next time... Its great experimenting and personalizing recipes. Thanks so much. I had fun making them...will try again with my own adaptations..

      Just made this for lunch today. YUM! I cut it down to make just one for myself, and it is a fantastic lunch! I left off the bell peppers (personal preference) and used spicy honey BBQ sauce, loved it!
