Great recipe, I do specifically love the fact that it's dairy free. As I can't get Pamela's mix here in Germany, I used Pancake Mix - Gluten, Dairy Free which works beautifully in this. Thanks for posting!

I've been making these for months based on the recipe on the Pamela's bag with minor mods - 2 eggs, 1c water. I've also added blueberry's or 1/2c pumpkin to make them different. We love these. No one has ever been able to tell that they are wheat free.

This is the best GF pancake recipe I've found, hands down. The ONLY thing I swapped was the dairy milk -- It worked beautifully with almond milk. Thank you so much for this! Also, I am at high altitude, and I didn't have to alter for that at all! So easy :)
I love making Pamela's gluten free pancakes especially when I have guests over. Depending on what fruits are in season, I'll use either blueberries, raspberries, and or Fuji apples. When I add apples, I like to add cinnamon and nutmeg to the batter... Then your pancakes taste like apple pie!
Just as good as any pancake...really! and healthier to broaden our grain intake to non-wheat alternatives...
