Paleo Dough for Bread, Buns, and Rolls

"Adapted from a recipe on Maria's Health blog... I have seen photos of this bread and it actually looks like... bread! Dying to try it for my hamburgers. Others cooks report this recipe makes great hamburger/hot dog buns and ciabatta-style sandwich rolls."

  • 295.73 ml blanched almond flour (or 1/2 cup coconut flour)
  • 73.94 ml psyllium, husk powder (no substitutes)
  • 9.85 ml baking powder
  • 2.46 ml sea salt
  • 3 egg whites (8 egg whites if using coconut flour)
  • 236.59 ml boiling water (or very hot tomato-basil soup for Italian bread)

  • Preheat the oven to 350 degrees F.
  • In a medium sized bowl, combine the flour, psyllium powder (no substitutes: flaxseed meal won't work), baking powder and salt. Mix until dry ingredients are well combined.
  • Add in the eggs and mix until a thick dough.
  • Add boiling water or soup into the bowl. Mix until well combined and dough firms up.
  • Form into 4 to 5 mini hoagie rolls or buns (the dough will rise about 2 to 3 times) or one large sub/loaf and place onto a greased baking sheet.
  • Bake for 65 minutes (50 minutes for smaller shapes like buns). Remove from the oven and allow the bread cool completely.
  • Cut open with a serrated knife. Fill with desired fillings.

  1. One of the easiest bread recipes ever! Tasty with texture of multi-grain. Will make again. Really wonder about the calories: 11 ??? Happy to be able to have a sandwich again.
