  • Whisk together the eggs, granulated sugar, vanilla, salt, half-and-half and brandy in a large steel bowl. Heat the oil to 325 degrees in a deep, cast-iron skillet.
  • Dredge the bread slices in the batter until both sides are thoroughly soaked. Remove from the batter and allow to drain briefly. Place the bread in hot oil carefully and fry about a minute per side, until golden brown.
  • Drain on paper towels. To serve, top with fresh berries, confectioners’ sugar and Chantilly Cream.

  • In a bowl, using an electric mixer on high speed, beat together cream, sugar and vanilla until soft peaks form.
