- 6 large eggs
- 3 tablespoons granulated sugar
- 1 1⁄2 tablespoons vanilla extract
- 1⁄2 tablespoon salt
- 3⁄4 cup half-and-half
- 1⁄3 cup brandy
- peanut oil (for frying)
- day-old bread, preferably country white bread or Texas toast thick bread
- powdered sugar
- fresh berries, for serving

For the Chantilly Cream
- 2 cups low-fat whipping cream
- 1⁄4 cup powdered sugar
- 1 teaspoon vanilla extract
directions
- Whisk together the eggs, granulated sugar, vanilla, salt, half-and-half and brandy in a large steel bowl. Heat the oil to 325 degrees in a deep, cast-iron skillet.
- Dredge the bread slices in the batter until both sides are thoroughly soaked. Remove from the batter and allow to drain briefly. Place the bread in hot oil carefully and fry about a minute per side, until golden brown.
- Drain on paper towels. To serve, top with fresh berries, confectioners’ sugar and Chantilly Cream.
- Chantilly Cream Instructions.
- In a bowl, using an electric mixer on high speed, beat together cream, sugar and vanilla until soft peaks form.
