This was a fun dish to put together that came out very tasty! I have never made Paella before, and this took the fear out of it. Rather than use "large" shrimp (which in this neck of the woods, means 31-40 per lb.), I would use "jumbo" or "colossal" (16-20 per lb.). The size of the "large" shrimp is too small and overcooks while waiting for the clams or mussels to open. I did use clams, since I prefer them to mussels. I couldn't find paella rice, but used arborio instead, which worked out very well. I have seen other paella recipes, and I liked the protein choices in this one (no bones in the chicken, etc.). All in all, this was a great one-dish meal that was surprisingly easy to put together. Made for ZWT8.
