      I used 1/2 pound of rice noodles for this and I would recommend adding some more veggies - there were still a lot of noodles compared to other ingredients. I would skip the ketchup in the sauce because it kind of overpowered the other ingredients. It was a quick dinner to throw together and with some tweaking (to our tastes), it would be great!
