  1. Grind the garlic, shallots, curry powder and peppercorns into a paste. Put the paste into a medium sized skillet, and stir-fry the paste until thick. Add in the chicken and the remaining ingredients and stir fry until the chicken is thoroughly cooked.
  2. Serve over rice.

We really enjoyed this different dish. It was simple to put together and very spicy, but in a good way. I had to use serrano peppers rather than jalapeno, as that's all they had at the store. I used brown sugar rather than palm sugar, because I *think* it's the same thing! Comments: I would use regular black pepper rather than peppercorns next time, and would advise others to do the same as that is a dominating flavor, and I didn't like that. I liked the other flavors more. Also, I'd slightly reduce the fish sauce amount next time because it was overly salty. I hate the smell of fish sauce- but the taste is lovely. Thanks for sharing this. We'll surely make it again.
