This is a typical Puerto Rican Christmas dish. When seasoned and cooked the right way is amazingly tasty.
- 10 lbs pork shoulder (or smaller)
- 10 garlic cloves
- 4 tablespoons all purpose seasoning (Adobo)
- 1 cup vinegar
- 1 cup canola oil
- salt and pepper
- Preheat oven at 350°F.
- Using a mortar, crush the garlic cloves and add 1 tbs of all purpose seasoning. In a medium bowl, mix oil, vinegar, garlic/adobo paste, and remaining of the APS. Add salt and pepper and mix. Rub pork with mixture.
- Bake for 3-5 hrs at 350°F turn the pork leg every 30 minutes.
This was really good! Absolutely loved the flavor of the balsamic, sugar and salt.
