- 12 oysters, shucked
- 1 tablespoon butter
- 3 fresh garlic cloves, minced
- 9 ounces Baby Spinach, chopped
- 1 teaspoon anisette
- 4 spring onions, diced
- 1 egg
- 3⁄4 cup mayonnaise (lite or regular)
- 1 dash Tabasco sauce
- 1⁄2 teaspoon Worcestershire sauce
- 1 cup romano cheese, grated
- 1⁄2 teaspoon dry mustard
directions
- Broil oysters in 9 x 9 inch pan to remove excess liquid (only about a minute); drain.
- Meanwhile saute butter with garlic.
- Add chopped spinach and saute until wilted.
- Add anisette and set aside.
- Spoon spinach mixture over oysters (either in the 9x9 inch pan or on individual oyster shells).
- Mix the spring onions, egg, mayonnaise, Tabasco sauce, Worcestershire sauce, Romano cheese, and dry mustard; spoon over spinach mixture.
- Return to broiler and cook until browned on top .
