This recipe's almost correct BUT John Ascuaga's Nugget starts off with a tablespoon butter AND garlic (almost a clove minced). Other than that you're right on.
Thank you so much for this. We lived in Carson City and used to drive up to eat this fairly often. It's wonderful but I lost the recipe when I moved. Hope the new owners of the Nugget keep this on the menu.

Good Recipe. I love Pan Roasts. I live in Las Vegas NV and this is almost as good as the Pan Roast at Sunset Station at the Costa Del Sol oyster bar. I don't know why but the other Oyster Bar's at other Station Casino's don't compare.

I was looking for a pan roast recipe for a long time. Very good very easy basic recipe.I used 1 lb of shrimp and 1/2 pound of lump crab(for 4 peolple). I cut down the fat and pump up flavor. I saute 1/2 of an onion 1/2 stalk of celery for 5 minutes. Then I add 4 cloves of garlic with 2 tsp flour to thicken for 2 minutes add the rest of ingredients as is but change to fat free half and half. Finish with only 1 1/ tbls of buter and use butter buds as well to make it buttery.
Oh, thanks Autuamnsprite, for this recipe. I first had it at the Silver Legacy casino in Reno and was shocked when they GAVE me the recipe. It is one of my all time favorite dishes and so easy to make that I do it often. I use a combination of seafood in it usually. I love shrimp, scallops, and crab about the best.
This is precisely what I was looking for. I have a hankering for this dish, which is popular at the Grand Central Oyster Bar in NYC. If this is not identical to theirs, it is very, very close. I will be making it soon. (Where is the Nugget?)
