Recipe by snappygourmet

An easy breakfast/brunch recipe that can be assembled the night before. Change the flavor of ice cream for a completely different flavor. Recipe is from my blog snappygourmet.com

I have to start by saying all I made was the Cinnamon Banana Syrup so this review only applies to that part of the recipe but it was so good I am sure the french toast part will be great too when I have ice cream in the house. Today I wanted to make french toast for my son's birthday and was looking for a banana french toast recipe and found this. The syrup was such an intriguing idea I made it to go along with Greaneyes' Banana French Toast Recipe #265038. I browned the banana slices in butter before I made the syrup as directed in this recipe and it was the hit of our breakfast. Everyone ate it even those not crazy about bananas and we were all coming up with suggestions for how to use it - over cake, crepes, ice cream or just spoon it up and enjoy! I think it might make fabulous Bananas Foster with some rum added or even a Banana Shortcake. Thank you for making my "Bananaeater"'s birthday breakfast very special!

Ingredients Nutrition

  1. Spread melted butter on baking sheet(s) until well coated. Set aside.
  2. Whisk together ice cream, eggs, and 2 teaspoons cinnamon in large shallow bowl until well combined. Dip bread slices in mixture, allow to soak for a few seconds, then place on baking sheet(s). Cover bread and set in refrigerator overnight.
  3. Preheat oven to 400 degrees F. Remove French toast from refrigerator (bring to room temperature if using a temperature sensitive baking dish such as glass) and remove cover. Bake at 400 degrees F for about 10-15 minutes per side or until golden brown and slightly crispy.
  4. Meanwhile, place maple syrup, vanilla, 1 teaspoon cinnamon, and banana in microwave safe bowl. Microwave on high in 1 minute increments, stirring after each, until bananas are soft, about 3-5 minutes. Serve over French Toast.
