ingredients

  • 5 -6 large potatoes
  • 14 cup vegetable oil
  • 4 -5 tablespoons spike seasoning
  • 1 tablespoon black pepper

directions

  • Preheat oven to 400 degrees.
  • Chop potatoes into 1 and 1/2 inch cubes.
  • In a plastic bowl toss spuds with oil.
  • Cover with spike and pepper and toss well.
  • Place in Cast Iron Skillet and place in center of oven.
  • Cook for 1 hour or until golden and tender when poked with a fork.

  1. PERFECTION. I like my potatoes reallly crsipy and this easy method did the trick. I used much less oil. Also I wasn't sure what spike seasoning was, so used cajun seasoning instead with great results. I kept my skillet in the oven while it preheated so the potatoes sizzled nicely when I poured them in. I had to cook at 350 because I was cooking short ribs at the same time. Will make these on a regular basis.
     
  2. Wow, these were wonderful Diana. I wasn't able to find Spike seasoning...but did get a recipe from dreamer... it's excellent. I ground all my own spices for an extra special treat. Look at what I've been missing out on... no more. I used it on our bbq spareribs and also in these beautiful potatoes. The potatoes had so much flavor... I was a little nervous about how the spice would turn out but it really complimented the potatoes. They were crisp and crunchy, yet still tender on the inside, just the way we like them. So happy to have tried these, which were made for CQ4-Wales. We will be putting these into our regular rotation.
     
  3. Delicious! I've never had Spike seasoning and didn't know where to find it so I found a recipe online and made my own. The rest of the recipe was followed as written.

  5. These potatoes were awesome! I just used salt, pepper, & garlic powder. I also sliced some onions in with the taters. Yumm! Will definitely make this again. Thanks for the great recipe! :)
