ingredients
- 4.92 ml ground cinnamon
- 4.92 ml chili powder
- 4.92 ml brown sugar
- 2.46 ml kosher salt
- 2.46 ml fresh ground black pepper
- 2.46 ml unsweetened cocoa
- 9.85 ml olive oil
- 9.85 ml balsamic vinegar
- 1 clove garlic, minced
- 6 boneless skinless chicken breast halves

To garnish
- salsa (optional)
- sour cream (optional)
- green onion (optional)
directions
- Heat oven to 400 degrees.
- Mix together rub ingredients in a small bowl.
- Rub mixture on chicken halves.
- Place chicken halves on a lightly oiled 15 x 10 inch jelly roll pan.
- Bake for approximately 20 minutes.
- Serve.

Thank you for a great, easy and delicious recipe! I love that it uses pantry ingredients and is so easy. I had 3 chicken breasts and a hungry husband when at the last minute we decide to stay home to eat due to the weather. I found this recipe and it was a hit! The spices were very nice, though I had to double the recipe to really get the chicken breasts covered nicely. Since we are on the South Beach diet, we substituted the brown sugar for Splenda and a little of Cary's sugar free maple syrup, which worked beautifully! Like the other reviewer I will add some chipotle chili powder and red pepper flakes next time for a little more kick. I made a quick cilantro-cream with low fat sour cream, chopped cilantro, lime juice, kosher salt and fresh cracked pepper and it made a perfect compliment for this slightly spicy chicken. Next time I will plan in advance a little bit and let the chicken marinate with the dry rub a little bit before baking. Super easy, quick, perfect weekday meal that will satisfy anyone. Thanks!
