"Tasty, quick version for oven roasting. I sometimes use half chili powder & half ground habanero powder to kick it up. Adjust any flavourings to your preference."

  • Heat oven to 400 degrees.
  • Mix together rub ingredients in a small bowl.
  • Rub mixture on chicken halves.
  • Place chicken halves on a lightly oiled 15 x 10 inch jelly roll pan.
  • Bake for approximately 20 minutes.
  • Serve.

  3. Wow, this was delicious! I followed the recipe exactly! The name does not do it justice. The flavor reminded me of chicken mole - just a lot easier and less calories! It smells so good when it is cooking, that my kids thought I was baking something for desert.

I had 3 chicken breasts and a hungry husband when at the last minute we decide to stay home to eat due to the weather. I found this recipe and it was a hit! The spices were very nice, though I had to double the recipe to really get the chicken breasts covered nicely. Since we are on the South Beach diet, we substituted the brown sugar for Splenda and a little of Cary's sugar free maple syrup, which worked beautifully! Like the other reviewer I will add some chipotle chili powder and red pepper flakes next time for a little more kick. I made a quick cilantro-cream with low fat sour cream, chopped cilantro, lime juice, kosher salt and fresh cracked pepper and it made a perfect compliment for this slightly spicy chicken. Next time I will plan in advance a little bit and let the chicken marinate with the dry rub a little bit before baking. Super easy, quick, perfect weekday meal that will satisfy anyone. Thanks!
     
  5. YUM! I made this a couple of nights ago. I've never used a rub and I'm new to cooking poultry, but we loved this. I ate mine plain with a little sour cream. The rub is a little spicy, but well within control; next time I will probably add a little cayenne or other chile powder. Thanks for posting!
