ingredients

  • 1 cup long-grain rice
  • 2 cans beef consomme
  • 1 small onion, chopped
  • 1 (4 ounce) can sliced mushrooms, undrained
  • 12 cup butter, cut into pieces

directions

  • Thoroughly combine all ingredients in a covered casserole.
  • Cover and bake 45 minutes at 350 degrees F.
  • Remove cover and bake another 15 minutes.
  • Fluff with a fork before serving.

  1. rnMiss Annie,I think this is a wonderful rice dish. There wasn't a oven temperture stated in the recipe,so I cooked it at 425* for 45 minutes.It didn't need the extra 15 minutes. I only used 1 can beef consomme,and it came out of the oven perfect. I enjoy fixing rice dishes,they are a nice change from potatoes and plain steamed rice. I personally think this will be a great buffet dish. Thank You for sharing! rn
     
  2. We enjoyed this recipe! I've seen variations of it for years in cookbooks and online and thought about trying it. Glad I finally did! Made the recipe exactly as written. Had this with steak and salad and it was a very easy weeknight meal. We will make this again for sure! I am wondering how it would turn out with 1/2 of the recommended amount of butter. I may try that next time. Thanks for the recipe!
     
  3. Yummy rice! I couldnt find beef consomme at the grocery store so I bought Campbell's Beefy Mushroom soup. That was almost a gravy consistency so I added some chicken broth I had on hand and needed to use. There were quite a few mushroom pieces in the soup so I didnt add the 4 ounce can of mushrooms and used dried minced onion instead of chopped onion. Simple to make and tastes great, will be making this again!
     
  4. Easy way to make rice. I already had something in the oven so I popped it in there too. I skipped the butter and used corn in place of mushrooms as that is what my kids like. Thanks for the easy recipe.

  2. This rice dish is full of flavor! It's consistency and taste is similar to risotto, without the work. I used fresh mushrooms instead of canned and added garlic. It was a big hit!!!
