Very good and easy recipe to do. I did find, however, that it took a lot longer for mine to cook. Took about 40 min. Maybe it was the container it was in??? But, once done it was a great little dish.

Just want to add to what others have said - this omelet is fantastic. I love the versatility of it - it is quick, easy, and is great to use up ingredients you have on hand. I used spinach,mushrooms, onion, mozzarella and cheddar cheese. The only thing I would say is that depending on the amount of ingredients you use, this is definitely more than 3 servings... thank you for posting..

WoW! What a fantastic way to make omelets :) We loved this recipe! I did add some ham chunks(black forrest ham. I look forward to adding other breakfast meats in the future. This recipe was so easy to make and the baking time was right on the money. I will be making this many more times. Thanks so much for sharing your mothers recipe :) Its DELICIOUS!!

I have made many oven omelets and this ranks right up there with the best. It was very light and fluffy. It was one of those 'the pantry is bare' kind of days so I was without fresh mushooms and peppers. I did have a can of mushrooms so together with about 1/4 cup of onions I sauted them in some margarine (2 tblsp). After they cooled I mixed them into the egg mixture and it turned out very well. Next time it will be fresh mushrooms and asparagus. Thanks for a great little recipe.

I've had this recipe saved forever in my cookbook. I finally tried it this morning and it was so easy and so good! I used eggbeaters,mushrooms,ham,provel cheese(but more like 1/4 cup) and a fresh tomato. This would be a fun recipe to play with. The only thing that didn't go so smoothly was getting it out of the pan. Next time I'll use some PAM spray..I should have known better! Thanks for posting!! :)

SOOOOOOOOOOOOOOOOO simple, easy to do, DEFINATELY keeper for you know who! Low fat bacon, grape tomatoes and peas, For hubby and me it did please!

Yum! This was really good. Next time I'm going to add some meat to it. I like this because you can pretty much add anything you want. Eggs are so versatile. Thanks!

This is a great recipe. For the taste alone, I would give it a 4 but when ease of preparation is taken into account, this becomes a 5. This will officially become on of my go to meals on a busy work night.
