- 4 boneless skinless chicken breasts
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon black pepper
- 2 teaspoons garlic powder
directions
- Preheat broiler.
- Rinse and pat dry chicken.
- Whisk olive oil and spices together in a small bowl. Add to chicken and coat. Let marinade 30 minutes.
- Cook chicken 6-8 inches from broiler about 5-7 minutes.
- Turn and cook an additional 5-7 minutes.

This really is a great recipe. I had to tweak it somewhat to suit my taste, however. The seasoning measurements are on the heavy handed side for my palate. I halved all the measurements except for the olive oil. Noting the broiling time, I pounded the chicken breasts to make them thinner to ensure they wouldn’t be undercooked. I broiled them for 10 minutes on each side. They came out perfect! I’ve got to say, they were the most tender I’ve ever made! Using a broiling pan and keeping it the recommended 6-8 inches away from the broiler is a must to get great results. I served them with butter and herb angel hair pasta. My family loved it! I love this winner of a recipe and the grilling method! Thanks so much!
