This recipe is based on a dish I had in Columbia South Carolina. Crisp oven fried potatoes with melted chunks of blue cheese. A good quality Blue Cheese really makes the dish.
- 4 russet potatoes, sliced steak fry style
- 3 garlic cloves, pressed
- salt and pepper
- 2 tablespoons olive oil
- 6 ounces blue cheese
- chives, chopped
- Coat the potatoes with Olive Oil, garlic, salt and pepper.
- Bake at 350 for 45 minutes, or until browned to your liking.
- Put in serving bowl and immediately top with Blue Cheese. Garnish with fresh chopped chives.
