Oven - "fried" Haddock Fillets

"Flounder or scrod can also be used in this recipe. This recipe came from "Incredible Edibles", a cookbook that has raised money for the Miles of Hope Breast Cancer Foundation in the Hudson Valley, New York state. I have made this recipe many times. Very tasty and nutritious!"

  • Preheat oven to 525 degrees. Cut filets into serving size pieces. Mix bread crumbs with cheese. Dip filets in milk first, then in breadcrumb mixture. Arrange in greased baking dish and pour melted butter over fish. Bake on top shelf 12 - 15 minutes. Garnish with paprika and lemon wedges and serve.

FH made this for supper one night on a whim, we'd NEVER cooked with fish before - it was always something we liked to order when we'd go out for supper, but we finally picked up some haddock, and gave it a whirl. FH made this, and we've been eating fish one a week now! We didn't have an bread crumbs on hand, so he substituted some crunched up Special K. Such a lovely recipe, it hits to spot just right! Thank you! :)
