  • Preheat oven to 425 degrees Fahrenheit.
  • Heat shortening in a rectangular 13x9x2 inch pan in oven until melted.
  • Mix instant mashed potatoes, Parmesan cheese, salt and pepper.
  • Dip chicken into eggs; roll in potato mixture.
  • Place chicken pieces, skin side up, in baking pan.
  • Bake uncovered until thickest pieces are done, about 1 hour.

  3. I love this easy recipe. I think it needs garlic powder or onion powder. That's why it's not 5 stars- kids loved it!
     
  4. Delicious and easy! I also added some garlic powder to the mixture. I cooked six chicken legs for 45 minutes and did not turn them. My husband is always wanting shake and bake chicken, and found he loves this much much more! Will definitely use again!

I am a happily almost divorced mother of 3 grown adults and grandmother of 6 beautiful children. I really enjoy cooking but I hate it when I cook something different and no one likes it so I'm very picky with my recipes. I'm very sensitive to criticism, but I'm working on that and using it constructively so that I won't make the same mistakes anymore, LOL! My hobbies besides cooking are traveling to the beach, reading and surfing the net for new recipes which is how I found Recipezarr. Since being on this site, I very seldom venture to any other.
