Mario Batali's way... He says it works well to put the tomatoes in right before you go to bed and remove them in the morning.


  1. Preheat the oven to 150 degrees.
  2. Slice the tomatoes in half lengthwise.
  3. Place cut side up on baking sheets.
  4. Combine the salt and sugar.
  5. Sprinkle a little bit over each tomato, about 1/2 teaspoon.
  6. Place in the oven.
  7. Cook slowly for 10 hours.
  8. Allow to cool.
  9. Refrigerate for later use.
