Oven Chipped Potatoes

"Posted for Zaar 2005 World Tour. This comes from a cookbook of countries along the Danube. The recipe is from Germany. I have not tried this recipe yet. Update: Just tried this the other night. The potatoes have a really nice texture! I could see adding garlic or more onion if you want. I recommend sprinkling the salt more evenly over the potatoes instead of combining it with the butter, but otherwise it's very tasty!"

  • Preheat oven to 425 degrees F.
  • Layer potato slices in 13x9x2 inch baking dish lightly sprayed with oil.
  • Melt butter in small saucepan and stir in grated onion, salt and pepper.
  • Pour over potatoes and bake for about 45 minutes or until tender when pierced with fork.
  • Sprinkle with parsley, thyme and cheese and bake for an additional 15 minutes or until cheese is melted.

  3. Amazing! I think the thyme is what made this. I always feel like there is something missing with just potatoes, onions, and cheese. I finally found it. So hard not to eat the whole pan!
     
  4. Yummy! I used a mandolin to slice red bliss potatoes. And served them as a side with sirloin steak and green beans! I will definitely be making this again! Made for the Pool Party Tag Game.
     
  5. Ohhh... I could have eaten the WHOLE pan! These are so delicious! I added about two cloves of minced garlic, as we're garlic lovers, but other than that I made as directed. I used a mandolin to slice 1.5mm thick slices & the edges came out perfectly crispy, while the middles were still nice and tender. Thanks for posting, Kumsie! Tweaks

  1. Well, these certainly are good, easy, too. I brushed the butter over the potato slices so that there would be a little bit everywhere and then I sprinkled the salt, pepper and herbs over the potatoes. Subbed oregano for the thyme. Very nice.
     
  2. I followed aviva's suggestions, and spread the potato slices out on a larger pan. Brushed them with melted butter, and then sprinkled on the spices. Beware if you do this~they will not take 45 minutes to cook. Mine were done in 20-25 minutes. Was feeling lazy and used onion powder instead of minced onion; added some garlic powder as well. Did not measure any of the seasonings, just sprinkled. Lovely combination of flavors. Thanks for the recipe! Next time I will try it in it's original form, but either way I'm sure it's a keeper!

Most relevant thing to mention here is that I am a vegetarian, and recently became a&nbsp;vegan&nbsp;(almost 100%). To put vegetables and other things not meat or fish on the table I work as an actuary (in my case anyway, a combination of statistician, number-cruncher and/or programmer). For fun I like to travel. Just came back from&nbsp;Namibia, a peaceful democracy in Africa with lots of animals! Got some terrific pictures of lions, leopards, cheetahs, elephants, rhinocerous, hyenas, all kinds of antelopes, giraffes and zebras. Namibia is the second most sparsely populated country per square mile, just behind Mongolia. Update:&nbsp; We went to Italy this Spring.&nbsp; We had lots of pizza and pasta.&nbsp; The pizza is so much better in Italy, particularly the crust.&nbsp; The Amalfi coast was absolutely beautiful.&nbsp; Spectacular natural scenery (Canada and Alaska are really beautiful, Patagonia in Chile is sublime, Iceland is unique) has been my latest passion as far as travel destinations but I have seen quite a few big cities too (Paris, Berlin, London and Madrid to name a few). On my bulletin board at work I keep a list of every country I've visited (other than the U.S. of course). So far I've made it to five continents: Europe, Africa, South America, Asia and North America of course. I've got only two other continents to conquer:) I don't usually have difficulty finding vegetarian dishes here in the U.S. or overseas, but finding vegan dishes is much harder. I have no kids, just cats, Kumquat, Cranberry, and more recently Quincy and Kiwi. They are purebreds, of the breed alley caticus (okay, American shorthair I guess). Our cats are not vegetarians, though my boyfriend (significant other, long-term partner, whatever) is. I am a friend of all animals both tamed and wild. In addition I am a freethinker and my boyfriend studies philosophy. Either way, we get along pretty well.&nbsp; Also, please allow me to say that my BF and I recently bought a condominium in NYC.:)&nbsp; Pet peeve?
