This recipe became an instant family favourite when I served it last night! I used crushed garlic (a clove) instead of garlic powder. The carrots were still hard after 1/2 hr in the oven, so just to make sure they were cooked through in time to serve with the rest of the meal, I zapped them in the microwave for 10 mins then put them back in the oven for the remaining 15 mins. Oven-baked Tender Carrots
