Easy and Delicious Oven-Baked "Fried" Chicken that I found on Food Network and its simply scrum-delicious. Hope you find it that way too.

  1. Coat a large baking sheet with cooking spray.
  2. In a resealable plastic bag or shallow dish, combine oats, garlic powder, onion powder, mustard powder, paprika, oregano, thyme, salt, and pepper. Mix well and set aside.
  3. Brush each chicken breast with Dijon mustard.
  4. Add chicken to oat mixture with tongs and turn to coat both sides.
  5. Transfer chicken to prepared baking sheet and spray with cooking spray.
  6. Bake 30 minutes, At 400 degrees, until golden brown and cooked through.

A very flavorful low-fat recipe! The coating wasn't as moist as "traditional" coating, but we all enjoyed it. Even the kids! The chicken itself was very moist though. I took the advice of the previous reviewer and put the oats and spices in my mini chopper/food processor. I think that was an excellent idea. A few of us used additional Dijon mustard as we ate it, but some ate it "as is". I served it with Extra Special Steamed Green Beans and long grain wild rice. It was like a fancy restaurant meal without the price tag or calorie overload!! Thanks for sharing!

Great recipe. The only change I would make is whirl the oats in the blender to make them a little smaller.
