I found it online too and I made them last night and they came out great!!! I added some brown sugar to the sweet potato like they do at the restaurant it came out delicious. Also I don't think that much shortening and salt are necessary for one potato I only used one tablespoon of shortening per potato and about one teaspoon of salt per potato, other than that great!!

I stupidly assumed since I was using the 60 minute time I didn't have to worry about checking the potato. Bam. Wasn't cooked AT ALL. I really abhor how cooking people are all anti-science and never do anything by measurements. Wish they could just say "hit internal temperature of X and maintain it for... " instead we are expected to run back and forth to the oven like idiot chickens with our heads cut off and "check" if it is done yet. Why? As if a different temperature and amount of time will be necessary in each instance? Certainly not. Cooking results are reproducible WITH THE DATA. Next time I'll have to try cooking the potato at least 90 minutes, hopefully it won't come out crap again and I won't have to wait until my 3rd try to get a decent potato.
