Out of This World Caesar Pasta Salad

"This is a recipe I adapted from a salad a friend brought to a pot luck we had one summer. I tweaked it a little bit and now I am requested to bring this to every get together. Very simple and inexpensive to make."

  • Cook pasta according to package directions.
  • Drain and rinse pasta under cold water until cold throughout. Toss pasta with
  • olive oil making sure to coat well. Believe it or not it prevents the pasta from
  • absorbing all of the dressing, thus becoming dry.
  • Add the rest of the ingredients and toss with dressing.
  • I like to garnish the top with more sliced green onions.
  • Add grilled chicken breast and this salad goes from a side dish to an entree.

I am a 30 yr old mom of 3 terrible, horrible rotten kids. Kidding......that's only part of the time. Kidding AGAIN! They are great kids. 14, 11 and almost 4. I love to cook and eat and I am great at both. I read cookbooks like they are novels and watch Food Network religiously to learn new techniques and methods. I am starting Culinary Arts here in the Seattle area in the fall of 2009. I am so excited. I have wanted to be a chef for as long as I can remember. When I picture my future it's not working in some fast paced restaurant, its owning a little cafe that makes great homemade food that I can be proud of. Not mass produced crap.
