I made these as muffins and froze them. I didn't use the glaze because I knew I was going to freeze these (they were for xmas gifts) They were delicious! I will make this again for my household WITH the glaze...I bet it is DIVINE!
I added 3/4 c. of sugar and it turned out really nice. Try to make as many holes as you can as not all the glaze got through. Maybe making holes on the all edges helps? I will try this again as I enjoyed and so did my Grandma and MIL. I added the milk alternately with the dry ending with the dry ingredients. It was very good and lemony.
I made this recipe today in an effort to use up a couple of lemons. I did add 1 tbsp of poppy seeds, because I love that combo. This is very tasty, not too tart, not too sweet, but a very nice blend of sweet/tart. So easy to put together. Thanks Derf for a yummy treat.
We always keep lemons in the fridge now precisely because of this recipe. Great with coffee!

this is delicious! Mine raised up really pretty and then promptly fell. But, I feel sure that was my fault. the taste more than made up for it!!
All is can say about this recipe is that it is YUMMY! Texture & taste were very good. Will definitely be making this one again. I may add some blueberries next time I make it because I love the lemon/blueberry taste combo. This recipe was made for the Cookathon in Memory of Judy-Jude
This is the best lemon loaf I have ever made or tasted! I add 1/2 cup of red and 1/2 cup of green maraschino cherries to the batter and it is a festive and delicious loaf for the Christmas season!
