Orzo Salad With Roasted Carrots, Currants, and Pine Nuts

- 236.59 ml orzo pasta (or any small pasta shape)
- 2.46 ml turmeric
- 4 carrots, peeled
- 4.92 ml ground cumin
- 4.92 ml ground coriander
- 4.92 ml paprika
- 118.29 ml currants
- 118.29 ml pine nuts, toasted
- 44.37 ml fresh coriander, chopped
- 59.14 ml virgin olive oil
- 29.58 ml spiced vinegar
- salt and pepper
directions
- Cook orzo in plenty of boiling water with 1/2 tsp tumeric added for 8-10 minutes or al dente.
- Drain and set aside to cool.
- Preheat oven to 350F.
- Cut carrots in half lengthwise then slice on the diagonal into 1/2" thick pieces.
- Place in a roasting pan, drizzle with a little oil,sprinkle with spices and toss to coat evenly.
- Roast for 30 minutes, remove and allow to cool.
- Mix orzo,carrots,currants,pinenuts,c8i and vinegar together well.
- Season to taste with salt and pepper.
- Serve hot as an accompaniment or cold as a salad.

I live in Las Vegas. I was lucky enough to run into Recipezaar around Nov. 2000 and got hooked quickly. I am a cookbook collector and have been collecting recipes for as long as I can remember.
