  • Cook orzo until tender.
  • Drain chickpeas.
  • In a large bowl, whisk lemon juice, lemon rind, oil, garlic, mustard and herbs. Add chickpeas. Let sit a few minutes. Add the drained orzo.
  • Crumble in the goats cheese.
  • Let rest for 15 minutes before serving. May be served warm or room temperature.
