I wasn't sure how much I'd like this, since so many people suggested alterations, but I made it as the recipe calls for and liked it very much. This is my new favorite marinade for cucumber slices.
My mother-in-law gave me a very similar recipe. Instead of ginger, use sesame oil. Not spicy. Very tasty. Kids love it.
This is Oi So Begi, a Korean dish my mom made when I was little. I'm happy to see it written down, as she is a "like that" kind of cook. The cukes get soft and more flavorful overnight. Thank you!!
MIL makes this, but uses some dried shrimp in it also. This has almost the same taste so I do not know what the shrimp adds, of course since we marinate our longer they are called "Japanese pickles".
I served this at DS 4th b-day party. I was extremely easy to put together but it was a bit strong in the ginger flavor. I think that I will play around with the amounts of things to get the dressing a bit more to our liking. But I really liked the simplicity of the recipe. Thanks Anna-Marie for posting it.
This is a nice, light cucumber salad. The longer it chills, the better it tastes. I added almost an extra tsp of sugar, even though I did use lower sodium soy sauce. I also think it could use more onion. I will play around with this recipe....maybe sliced Vidalia onion instead of green onion? I'll make this again. Thanx for sharing.
