  1. Cook the orecchiette in a large pot of boiling salted water until al dente, drain well.
  2. In a large, deep skillet, heat oil, over medium heat.
  3. Add the garlic and cook over moderately high heat until golden.
  4. Slice diagonally the stem and floret of the broccoli raab and coarsely chop the broccoli raab greens.
  5. Add the broccoli raab, crushed red pepper and salt.
  6. Cover and steam for 5 minutes stirring occasionally.
  7. Stir in the hot chicken stock, sausage and butter and cook over high heat until the sauce reduces slightly, about 3 minutes.
  8. Add the cooked orecchiette to the skillet and toss gently.
  9. Sprinkle half the Parmesan cheese on top and toss, sprinkle the other half and toss again.
