    Directions:

      Melt butter in a saucepan.
    2. 2
      Cook apple, potatoes, leeks, onion and celery 5 to 8 minutes, at low heat, without letting them take colors.

      Add stock, nutmeg and cinnamon.

      Add salt and pepper. Bring to boil. Reduce the heat and let simmer about 30 minutes until the veggies are tender.

      Put in blender and puree until creamy.

      Put back in saucepan and add cream. Let simmer 2 to 3 minutes, just to reheat. You can add parsley on top of the soup as garnish.

      I'm going to have to go with a 4 rating too. I got a 3 and a 5 vote from the two guys who had this tonight. DH said 3 because "It just tastes like potato soup" and the 5 from our friend who loved "the subtle additions". I think it just comes down to how your taster works. Was to make and I love that it's low cal so it's a no guilt first course.

      This is a very unusual, but lovely soup! It has a great sweet, tart flavour with some bite frim the leek and onion. A very tasty combination!!! I used a German apple called Elstar, which is reddish in colour but rather on the tart side. I felt that maybe two full apples were a bit too much as their flavour was very dominant, so next time I might only use one and see how it goes from there. I somehow liked this better lukewarm than hot. Overall a great dish that I will surely make again! THANKS SO MUCH for sharing it with us, Boomie!       Good soup! None of the flavors dominate. I wasn't sure what type of apples to use but decided on Granny Smith apples for a little tartness. I had to leave out the leek because my grocery store did not have any available....but we didn't miss it. I served with freshly baked bread. Thank you for the recipe.
