  • Peel and segment the oranges, ensuring that no pits, pith or skin remain. Put the segments in a glass dish and set aside. In a small saucepan, bring the sugar and water gently to the boil, stirring occasionally. Boil for 15 minutes, until it is the consistency of a thin syrup. Add the rosewater and stir to blend. Pour the syrup over the orange segments and chill until required.

  1. I was swearing a blue streak before I finished segmenting the oranges - I am sure there is a better method, should have checked YouTube, but instead I ended up with sticky, juicy hands. The flavor was quite subtle, it may have been my rosewater, but it was a refreshing treat. I'll see if I can find enough respectable pieces to make a decent photo... If I have any syrup left over, I am going to use it in tea - I think it will be quite delicious.
