      Really divine! I made this this evening for my dad to enjoy after dinner tonight. This makes about 2 servings and NOT 4-6! I omitted the dates and orange rind totally as I don't like either. I used 2 1/2 tbsps. of honey, a little more than 1/4 tsp. of essence, 2 tbsps. less than 1/2 a cup of orange juice, 1/3 cup Basmati rice, 1/2 cup raisins and 2 cups of low-fat milk. All throughout I had the wrong picture in my mind that once baked this would have become golden brown and have a crust like appearance. When I baked it in the oven(which I'd pre-heated to 160C) for 10 minutes, I failed to see the crust like pic which I'd had in my mind, and I baked it for another 10 minutes and thereafter for another 10 ! So, in total, I baked it for 35 minutes! No wonder my house is smelling so orangey and mmmmm, lovely!:) I also loved the taste of raisins in this, loved biting the bloated raisin:) A tip I'd like to share with everyone is when you add the rice to the boiling milk(step 2), if you are short on time and want it to cook faster, partially cover your saucepan(I do this everytime I cook rice). It really works! Next time, I'll be adding a few strands of saffron in step 1, i.e., while boiling the milk, for auntenticity(really Indian). Another thing, I did grease my ovenproof dish with margarine before putting in the mixture into it for baking. I enjoyed this warm and I think it's better served that way, but, to each his own!       Will admit from the start that, after reading the other reviews, I started with a full cup of rice, & followed the recipe from there on down, & included the zest & 8 large Medjool dates! What resulted was ONE OF THE NICEST TASTING RICE PUDDINGS I've ever had! I think the juice, zest & dates were outstanding! Thanks for sharing the recipe! [Tagged, made & reviewed in Gimme 5 tag]

      This is the first time I have been unable to get a recipe to work for me. :( I cooked the rice and milk mixture for 55 minutes and the rice never absorbed the milk. I threw that batch away and made again using 1 cup of rice to the 2 cups of milk. I got it to work but the rice didn't cook through. The orange flavor was really good. Sorry Boomette1 that I couldn't get your wonderful recipe to work for me.

      I got sidetracked with plumbers today (who came early!) and I let the pudding over bake so it came out drier than I would have liked. That said, DH had no problem getting his "rating sample" down and he gave 4 stars. He liked the orange but said that he was glad it wasn't any stronger. I skipped the orange peel and dates. I'll likely make this again and bake it for less time to keep it more creamy.

      I made this yesterday for a lovely breakfast! Only 2 servings for me too! It's a great combination of flavors. However I made some changes: I had to pour off almost half the milk, there just wasn't enough rice to absorb it all. I omitted the honey and used 4 dates (and the orange peel) since they were optional. Next time I will use more dates and less raisens- personal preference. I also just warmed everything for a few more minutes in the casserole dish on the stove rather than baking. Thanks very much!

      This is awesome rice pudding! Other than adding 1 tbsp sugar to the milk/rice recipe I made it to specs. I was not dissapointed at all. It has a wonderful flavor of honey and orange. This only yielded about 1 1/2 cups, which is about 2 servings. I do need to add though that this should be eaten right away, as it dries up after a short time.
