I made a double batch last night, and they were delicious. Two changes....I added mixed dried fruit [craisins/raisins/currants] instead of nuts, and I sprinkled about 1/2tsp white sugar on top of each muffin before baking. My double batch yielded 24 large muffins.

  1. Preheat over to 350°F.
  2. In a large bowl combine the first 6 ingredients (dry).
  3. Mix remaining ingredients in another bowl until blended; stir into flour mixture until just moistened.
  4. Spoon batter into a greased or paper-lined muffin pan.
  5. Bake for 25-30 minutes. Remove from pan; cool on rack.
