My own recipe. So different and refreshing especially on a spinach salad.
- 1⁄2 cup purchased pineapple-orange juice (or made)
- 3 tablespoons lime juice
- 1 1⁄2 tablespoons honey
- 1 1⁄2 tablespoons walnut oil
- 1 teaspoon balsamic vinegar
- salt and pepper
- Whisk all together.
- Allow 15 minutes for flavors to meld.
- Whisk before serving.
I doubled this recipe and let people pour on what they wanted, since I was unsure if I'd have enough for a larger salad as written. Since I didn't have pine-orange juice, I drained some of the pineapple juice out of a can and added orange juice. This dressing is great on the spinach salad I make with mandarin oranges and sugared nuts. Tastes as good as dessert!
Wonderful light tasting viniagrette! I made my own pineapple orange juice by using crushed pineapple with juice, some o.j. and some sugar. I love the blend of flavors in this, just light and flavorful. It was great on my spinach salad! Thanks Pebbles!
