Orange-Pineapple Cake

  • Cake: Grease and flour 3 8 inch round cake pans.
  • Mix cake mix, oil, eggs,& Mandarin oranges including juices.
  • Pour in to prepared pans.
  • Bake at 350 for 30 minutes (check with tooth pick) or until tooth pick is clean.
  • Do not over cook layers.
  • Icing: Drain Pinapple and save juice.
  • Mix Cool Whip,instant pudding, and pineapple in large mixing bowl.
  • Spoon pineapple juice over each layer before icing.
  • Spread icing over each layer and ice cake.

  1. I've had this recipe for years! It was given to us by a friend of the family. We always make it as a Bundt or 13x9.... I really want to make it as cupcakes though. I've been debating all week (and should've just done a test run but didn't think about it) whether or not they'll come out okay. Anyone made this as cupcakes, or if not does anyone think it'll be alright?
     
  2. Do you add the pudding mix only or do you make the pudding and add milk before mixing with cool whip??
     
  3. Have you ever used an orange flavored cake mix instead of the yellow one?
     
  4. I am not clear about the instant pudding. Am I using the dry mix in Cool Whip or making the oudding as directed?

  1. This cake was really good. Very moist! It wasn't specified if the oranges should have been drained or not. I was in fits for a few minutes but then I dumped them in, juice and all. I also misread the recipe and only used 1/4 cup oil accidentally but overall the cake was great anyway. If you get around to it, submit a correction about the juice because I would really like to know if I was supposed to use it! Thanks for the recipe!
     
  2. When adding mandarin oranges to cake mix, dump in the oranges with juice and all. Sorry I didn't make that clearer. Thinking about this cake is making me hungry for one!
     
  3. This is a superb dessert but I have a few variations. First use 2 9 inch cake pans. Spread a small layer of orange marmalade over the first layer, then brush pineapple juice over that before frosting. You may repeat this on the top layer if desired. Once entire cake is frosted sprinkle with chopped nuts (any kind). For best results refrigerate covered over night. Very moist and nice looking cake, thanks Nancy!!!
     
  4. I use applesauce rather than oil to reduce fat. I made 2, 9 inch pans and did not ice the sides. Everyone loved it. I usually make a chocolate dessert....no more!
     
  5. Made as a birthday cake. Easy and tasty! The cakes were beautiful, so I decided to leave the sides bare. I've heard this called a pig pickin cake, but the birthday girl wasn't thrilled with that, so we went with an alternate name we found, Sunshine Cake! I used melted butter instead of oil. I don't mind boxed cake or pudding, but I draw the line at Cool Whip, so I whipped and sweetened 1.5 cups of cream to replace it.

  1. I'm not a fan of vegetable oil, so I substituted melted butter for vegetable oil, and whipped cream for cool whip. Worked great!
