Orange Pine Nut Chicken (Oamc)

  • Mix all ingredients except chicken together in a medium bowl.
  • Place chicken breasts in a freezer bag, and pour marinade over chicken.
  • Freeze.
  • Serving Day:

  • Thaw completely in refrigerator (about 24 hrs).
  • Remove chicken from freezer bag, reserving marinade.
  • Grill chicken over medium heat, until chicken is tender and no longer pink.
  • While chicken is grilling, toast pine nuts on a cookie sheet in 350 degree oven for about 15 minutes, until lightly browned.
  • In a small saucepan, combine the reserved marinade and 1 T honey. Bring to a full boil and continue boiling or 2 minutes.
  • Place grilled chicken on serving platter and pour sauce over chicken. Top with toasted pine nuts to serve.

  1. Oh yummy, this was another five star recipe. I think you could easy serve this up to guests, it's quite classy. We loved the orange flavour the zest makes all the difference, DH said it had zing and the pine nuts on top were very nice. I used chicken thighs as I think they have more flavour and don't dry out so much, but if I was having it at a dinner party I would use chicken brests. Once again I have found your recipes very good. Thank's for posting. Made for PAC Spring 2010.

<p>I'm Melissa, I've been married to my best friend Michael for the past 13 years. <br /><br />I love to cook when I have time, and am constantly looking for new and fun dishes to try out. Working full time and commuting over 2 hours a day leaves me with little time or energy to make weeknight meals. I love the convenience of having delicious, homemade frozen meals already prepared and ready to heat up. <br /><br />This year has been a rough one on a personal level. In January we lost our 5 year old Rottie very suddenly to a seizure of some sort. In June, my husband was in a coma as a result of a drug interaction. In September, we lost our second dog to Histiocystic Sarcoma, which we did not know he had until right before we had to put him down. For me, cooking can become therapeutic, allowing me to forget about my worries and hurts, and letting me create something sarisfying. <br /><br />I work for a financial company. In my spare time, I love spending time with my husband, gardening, reading, watching movies, creating art, and improving our home.</p>
