Orange Pecans

- 29.58 ml unsalted butter
- 19.71 ml orange peel, grated
- 9.85 ml ground cinnamon
- 4.92 ml ground coriander
- 2.46 ml ground cloves
- 1.23 ml cayenne
- 473.18 ml pecan halves (10 ounces)
- 29.58 ml sugar
- 4.92 ml salt
directions
- Preheat oven to 300ºF.
- Melt butter in heavy medium saucepan over low heat. Add orange peel, cinnamon, coriander, cloves and cayenne and stir until aromatic, about 30 seconds.
- Add pecans, then sugar and salt and stir to coat evenly. Transfer nut mixture to baking sheet.
- Bake until nuts are toasted, stirring occasionally, about 20 minutes. Cool. (Can be prepared 3 days ahead. Store airtight at room temperature).

These were GREAT and AROMATIC! I made a half recipe. Mine were a little burned at 20 minutes. I did stir them 3 times but perhaps I needed to stir them more than that? They still tasted good. Like cookiedog said, they have just enough heat to warm your mouth. The spice mix is very nice. They are appropriately named because the orange flavor stands out the most. Made for Photo tag.
